Easy Peasy Pie

I got this story second-hand, but I have every reason to believe it’s true. Jean told me on the Fourth of July that her pie recipe came from one of those Food Network shows. One of the Dean boys told their mama, Paula, they could make a pie in two minutes and he did!

Jean made four of these for the Fourth of July and they were gone in less time that it took to light a firework. I’m making a few this week myself.

Easy Peasy Pie
(As told to me. I named it this.)

  • Blackberries or other fresh fruit (use your imagination)
  • Blackberry preserves or jelly
  • Graham cracker pie shell (already prepared or make one yourself from the recipe on the box of graham cracker crumbs)
  • Whipped cream, Cool Whip, ice cream, whatever you like.

Mix the jelly with the fruit and fill crust. Top with your favorite topping. Chill for a few hours.

I might try strawberries or peaches or a combo of fruit. Whatever, it’s good and easy and fits my summer style.
